Pickelfleisch is the signature product of the Panzer house. The beef brisket is brined, then smoked, and sliced to order behind the counter. This is the preparation that drew all of Paris to rue des Rosiers, and the recipe has not changed since Nicolas Panzer took up his father's apron. Serve it cold, thinly sliced, or briefly warmed.
