Nicolas and Fleur Panzer welcome you at 36 avenue Paul Doumer, a short walk from the Trocadéro.
The shop
The shop is the length of its counter. Pieces are shown whole, labelled one by one, and cut in front of you: nothing is sliced in advance, nothing waits under film.
At the back, the grocery: preserves, jars, wines. To one side, the barrel of malossol pickles, drawn with a ladle as on rue des Rosiers.

The craft
Four meats, worked entirely on the premises: beef for the pickelfleisch and the pastrami, veal for the smoked shoulder and the bone-in ham, turkey for the roasts, goose for the smoked breast and the foie gras.
Each piece is brined for several days, smoked, then slowly cooked in the workshop. Nothing arrives ready-made: that working time is what you find again at the cut.
Cutting is done to order, at the thickness you want: thin for a sandwich, thick for a plate. Nothing is sliced in advance.

Dimitri Panzer's recipes are prepared today as they were on rue des Rosiers. A product you recognise from one year to the next is all a house can promise.

Nothing is sliced in advance. It is slower at the counter, and it is the only way a slice arrives as it should.
One address, not a chain
A single shop, run by the family. What leaves here has passed through the hands of someone who carries the name.
